Mangia, Mangia

Participants really enjoyed this 3-part “Taste of Italy” Adult Ed Cooking Class and with good reason: the first class offered honey wheat muffins with ravioli/tortellini salad, while the second course (class) dished up some shrimp scampi.  The pièce de résistance will be featured in the third and final class when the group will bake up some homemade orange biscotti.  Instructor Randy Lucero showed off his flare for cooking and also pointed out the health benefits of using vegetables of various colors to not only improve the look of the meal, but to provide a better assortment of vitamins as well.   The results were nutritious and delicious!
